My bag smells sour. Is it bacteria or yeast?
A sour, vinegary, or sweet-cider smell with slimy kernels suggests bacterial contamination. Yeasts often appear as oily sheens or bubbles. Discard contaminated jars or bags. To prevent: drain grain thoroughly, avoid burst kernels, sterilise at 15 PSI for adequate time, test LCs on agar before use, and minimise humidity contacting filters during incubation.
